Matrices all have names and so you don't actually have to connect them by cables as you can make two with the same name and they share the same data. Jitter treats all video as a 'matrix' which is actually just an arbritrary n-dimensional grid of data (rgba video is 6 dimensions: x/y/r/g/b/a). I know that they chose to limit the Jitter capabilites in Max for Live to get people to still buy the standalone. It's more that if you own Max for Live but not standalone Max then you can't code and see the changes straight away.

You can use the bpatcher object to automatically load in different patches and you could use clips in ableton to fire messages to the video master patch to load the desired clip/loop/patch How I'd likely go about it: dedicated video channel in ableton that has automated clip/effect/whatever loading. I'm a long time max user and that whole combo of Ableton/Push/Max/Jitter just seems awesome. I have been gear lusting after one for ages. I heard there is awesome max for live integration with the push controller too! Apparently you can forward text to the LED screen on the controller. You could definitely get incredibly tight integration though! It's also possible to pump OSC (and maybe midi?) into quartz composer but if you are going the ableton route then Max makes the most sense. I know it doesn't let you 'live patch' - you have to lock the editor to see the video instead of being able to see changes as you make them. If you don't own the standalone version of Max there are some limitations on what jitter can do in Max for Live.
